Natural Salmon

Our Farm Raised All Natural Atlantic Salmon is raised in the crystal clear waters off of British Columbia, Canada. We buy from only one farm and have been for the last 5 years. Our Atlantic Salmon provider is highly regarded in the Seafood industry and there Salmon is considered by many Chefs to be the elite farm raised Salmon. Superior texture, color and most important flavor, you will not find a finer Atlantic Salmon.

Wester Ross Scottish Salmon

Based on the North West coast of Scotland, all operations minimise our environmental impact and are carried out to the highest standards of welfare ensuring that we are producing the finest quality Scottish Salmon in harmony with our environment. Our salmon are:

Our aim is to meet the stringent requirements of Scottish salmon smokers and discerning caterers throughout the UK and export markets; which currently include Canada, Thailand, USA and Western Europe.

Location-Natural attributes of the area of Wester Ross such as the deep, sea lochs of Loch Broom, Loch Little Broom and Loch Kainnard has allowed this area to play an important role in the development of salmon farming industry. Home to our freshwater site, Elphin, and sea sites of Ardmair, Corry and Ardessie, the waters of the west coast offer excellent growing conditions. With a processing depot based in Dingwall, we are able to offer next day delivery throughout the UK, Western Europe and the United States.

Production The salmon are hand-fed a responsibly-sourced diet developed by Ewos in combination with a high-quality, sustainable fish meal, developed specifically for Wester Ross by our feed producer Skretting UK. The fish meal is made from offcuts of the filleting process of fish bound for human consumption originating from the North-east Atlantic only. The welfare of our salmon is critical; happy, healthy salmon will survive, grow and produce a quality product. Harvesting-An upsetting but inevitable part of any farming process, we can truly say that our techique offers the most stress-free, quickest and kindest solution; which also plays a part in producing the best quality product.

Current export markets include Japan, Hong Kong, USA and Western Europe. All our salmon are fully traceable to eggs, and previous generations, carefully selected for their eating qualities.

Accreditation-Believe it or not, Scottish Salmon farmers are among the most highly-regulated farmers in the world. Our farming methods are regulated by ten different statutory bodies and 63 pieces of legislation!

RSPCA Freedom Foods-This standard allow further differentiation from other commodity salmon farmers; covering all aspects of salmon rearing – management, husbandry, equipment, environmental quality, feeding, health, transport and slaughter.

ISO14001 Environmental Management System-ISO 14001 is the principal management system standard which specifies the requirements for the formulation and maintenance of an Environmental Management System (EMS).

Protected Designation of Origin (PDO)-PDO is the Protected Designation of Origin. It officially guarantees the origin and quality of products with a history and tradition behind them. The PDO was created by the European Union to help consumers by informing them about the specific features of the products, and to protect their geographical appellations against imitations and usurpations.

KLBD Kosher Certification-Kosher food is food prepared in accordance with Jewish Dietary Laws. Jewish Dietary Laws are rules and regulations concerning food that are derived from Biblical laws and rabbinical extensions. KLBD Kosher Certification is one of the world leading kosher certification agencies operating in over 46 countries and certifying many of the multi national food processors and material manufacturers alike.

Wild Salmon Program

In addition to our Natural Atlantic Salmon, The River Falls Market is a leader in the procurement of Wild Pacific Salmon. We carry all varieties of Wild Salmon providing us with Wild Salmon nearly year round. From Alaskan Copper River King and Sockeye Salmon to Troll Caught Coho Salmon you can be assured our Wild Salmon is the freshest, highest quality available. Wild Salmon is loaded with natural oils and minerals and it is outstanding for all types of preparations including Grilling, Poaching and Baking.

Rockfish

At the River Falls Market and Renato’s at River Falls we have our own “Hook and Line’ Rockfish Captain, Boat and License. This gives us the capability of having Fresh Chesapeake Bay Rockfish, Bluefish and Spanish mackerel delivered the same day it is caught. No other Market or Restaurant can provide fish this fresh. Captain Tom Byrne out of Deale, MD fishes exclusively for us and takes great care to assure our fish are pristine in every way.

Steamed Maryland Crabs and Fresh Jumbo Lump Crabmeat

We have a unique relationship with Harris Crab House located at The Kent Narrows Bridge to provide our market with Jumbo Steamed Maryland Crabs between May and October. These spectacular Crabs are hand selected and shipped to us overnight. We sell our Crabs by the each, dozen or bushel. Please inquire regarding prices. Furthermore we carry Fresh genuine Maryland Jumbo Lump Crabmeat through the summer and fall Months. There is nothing quite like the flavor and freshness of this outstanding Crabmeat.

North Carolina Seafood

Much of our fresh Fish and Shrimp come from Coastal North Carolina. We work with individual “day boat” fisherman assuring us of products caught the day before it is in our market and restaurant. From Black Grouper and American Red Snapper, to Swordfish and Yellowfin Tuna, even Fresh Jumbo Shrimp (Never Frozen), our North Carolina Seafood Program is fantastic.
